Perfect appetizers for holiday entertaining. I make these for parties year round but especially the holidays cause it’s not only delicious but a great make-ahead dish. It’s easy finger food that’s tasty and not your average pinks in a blanket fare not that I’m opposed to pork & puff pastry but I always get rave reviews about guys. You can also experiment marinading with different marmalades and jams. I tried them with a peach & thyme jam I picked up at the farmer’s market. So yummy!
Orange Marmalade Chicken Skewers
Ingredients
- 1 cup orange (or any citrus variety) marmalade
- 1/4 cup balsamic vinegar
- 3 tablespoons of fresh thyme
- 3 tablespoons olive oil
- salt & pepper to taste
- 3 pounds boneless skinless chicken breast, cut lengthwise into 1-inch wide strips
- 6-inch wooden skewers
Directions
Combine everything except chicken and skewers, add chicken strips and toss. Cover and marinate at least 4 hours. When ready to cook, heat oven to 425 degrees F, remove chicken from marinade (reserving marinade) and insert 1 piece of chicken on each skewer. Heat the reserved marinade in a small saucepan until boiling. Arrange skewers on a foil-lined baking sheet and bake for 10 minutes, flip skewers and baste with remaining marinade. Bake about 5 more minutes, until golden brown on both sides and cooked through.
