It’s Holiday season which for me means less work, no school, more time @ home with the kids, baking and a bit of insanity due to all of the above.
My solution is dessert & cocktails!
These are my “Eddies Party All The Time Cake Bars” because my son thinks they belong in a party and you know Eddie loves girls that like to “Party All Time”
I actually had a very odd run in with Mr. Murphy back in the day. Late nineties I think, I was 19 or 20 and yes this girl did like to party all the time. After a few white Russians my then signature drink (such a girly 19 year old drink!) I was shaking my then size 4 bom-bom in the VIP section of Miami Beach’s Crobar Night Club ( I think it was Crobar It might have been the one above Payless Shoes. The nightclubs change names so often it’s hard to keep track) and as in any South Beach VIP section there’s always a few celebs to spot. This particular night was for Eddie Murphy and of course I thought it completely reasonable to go over to Eddie’s table. The music’s pumping and the bubbly’s popping at Eddie’s table so I stroll on over to say hi. I’m sized up by a bodyguard type and given a nod to proceed. He smiles at me. So, of course what comes out of my young, white Russian overdosed mind? A serenade of course. “Hey! My girl wants to party all the time, party all the time, party all the tiiiiiiiiiimee…… My girl wants to…. Hey! What?” That’s when I was escorted out of the VIP area.
Come on! That was a classic. One Eddie should be proud of. So in honor of the timeless one hit wonder, Today we bake!
Eddie’s Party All The Time Chocolate Cake Bars
Ingredients:
1 ¼ cups all-purpose flour
2 tablespoons instant cocoa powder
1-teaspoon baking powder
¾ teaspoon salt
1 bag of chocolate chips (semi-sweet or regular)
1 stick of butter (1/2 cup)
3 large eggs
Heat the oven to 350F
Then start mixing.
1st all of your dry ingredients except the sugar then in a double boiler which if you don’t own one. You can just place a heat safe bowl over a small pot of boiling water.
Place a little over half the bag of chips in your boiler. As the chips began to melt and become a yummy chocolaty sauce add the butter then once melted remove from heat and add the sugar & eggs. Now it’s time to bring it all together add the chocolate mixture to your dry mix. You should now be mixing up a chocolate batter which your going to now let sit for about 30 minutes.
It’s time to bake, it’s been 30 minutes and the kiddies are getting restless.
Add the remaining chips to the batter and pour into a greased & floured cake pan. You can also use a muffin pan or individual cake pans anything oven safe that can bake batter will work.
Bake for 15 to 20 minutes.
I hardly ever remember exact baking times. I let my nose & eyes decide. If it smells good and looks like a cake you’re good. You can always do the knife test which is basically sticking a knife in the center & if it comes out clean. You’re ready to eat.
So, I did promise cocktails and keeping with my 90’s Eddie theme.
Here’s a perfect dessert cocktail.
One Hit White Russian Wonder
Start with a tall glass half filled with ice
Fill 1/3 with white chocolate coffee creamer, 1/3 Kahlua & a shot of vanilla rum (plain works fine too)
Shake & enjoy!
